
The classic Tarte Tatin baked with fresh nectarines, perfect for an afternoon coffee or dessert.

- 150 g sugar
- 150 g butter
- 3-4 nectarines
- 450 g puff pastry

1Cut the nectarines in half and remove the pits. Set one half aside and cut the rest into quarters.

2Place the sugar in a Tarte Tatin dish. Alternatively, you can use a pan that is ovenproof.

3Melt the sugar until it begins to caramelize, then add the butter.

4Let it simmer until it reaches a caramel-like consistency.

5Place the nectarine pieces in the center of the dish with the cut side up. Arrange the quartered nectarines around it, and make sure to press them together well. They can overlap slightly.

6Let the nectarines simmer until they have absorbed some of the caramel. Remove the dish from the heat.

7Preheat the oven to 200°C.

8Roll out the puff pastry into a lid that is slightly larger than the dish.

9Place the pastry over the dish and press the edges down well around the nectarines.

10Bake the tart for 25-30 minutes, until the bottom is golden and crispy.

11Let the tart cool for 10-15 minutes, then invert it onto a plate. If you wish to serve the tart in the dish, wipe it clean and return the tart to the dish.
