- Asparagus

- Cherry tomatoes

1Start by trimming your meat. Heat your BBQ pan well with oil.

2Cook the meat — I sear my rook breast for 1 minute on each side, then let it rest for about 10 minutes.

3Snap the woody ends off the asparagus. Halve the tomatoes. Slice the leeks lengthwise.

4Sauté the vegetables in butter, salt, and pepper. They should be warm but still crisp.

5Slice the meat and top with freshly shelled peas and a splash of lemon juice.
