  • Rook breast (or another meat of your choice)
  • Asparagus
  • Leeks
  • Cherry tomatoes
  • Tenderstem broccoli
  • Fresh peas
  • Butter
  • Neutral-flavored oil
  • Salt and pepper
  • Lemon juice

    Start by trimming your meat. Heat your BBQ pan well with oil.

    Cook the meat — I sear my rook breast for 1 minute on each side, then let it rest for about 10 minutes.

    Snap the woody ends off the asparagus. Halve the tomatoes. Slice the leeks lengthwise.

    Sauté the vegetables in butter, salt, and pepper. They should be warm but still crisp.

    Slice the meat and top with freshly shelled peas and a splash of lemon juice.
