  • 175 g feta
  • 125 g mozzarella
  • 50 g wheat flour
  • Salt and freshly ground pepper
  • 1 tbsp. herbes de provence
  • 1 egg
  • 100 g coarse breadcrumbs
  • 1 litre frying oil

    Cut the feta and mozzarella into cubes of about 3 x 3 cm.

    Put the flour in a bowl and stir in the salt, pepper and herbes de provence.

    Beat the egg in another bowl and add the breadcrumbs to a third bowl.
  • 4
    Dip the cheese cubes first in the flour, then in the egg and finally in the breadcrumbs.

    Heat the oil in a cast-iron pan. Test with a wooden skewer whether the oil is hot; when small bubbles appear around the skewer, the oil is ready.

    Deep-fry the cheese cubes until golden and crisp and drain on greaseproof paper.
 
Chef’s Note
If you like, stick small wooden sticks into the crispy cheese fries and serve them with plum jam and sparkling wine in a glass!
