Salmon à la Caesar Salad

Croutons:
  • 2 slices day-old bread or ciabatta
  • 2 tbsp olive oil
  • Salt and pepper
Salmon:
  • 400 g salmon fillet
  • 50 g breadcrumbs (or panko)
  • 50 g Parmesan
Salad & Dressing:
  • 1 romaine lettuce
  • 1 red onion
  • 150 g cottage cheese
  • 50 ml milk
  • 2 tbsp lemon juice
  • 2 tsp Dijon mustard
  • 2 tsp Worcestershire sauce
  • Optional: 1 anchovy
  • 50 g Parmesan
  • 2 cloves garlic
  • Salt and pepper
  • 25 g Parmesan (for topping)

    Preheat oven to 175°C.

    Tear bread into pieces, toss with oil, salt, and pepper, and bake for 10–12 minutes until golden.

    Meanwhile, blend the cottage cheese with milk, lemon juice, mustard, Worcestershire sauce, optional anchovy, half of the freshly grated Parmesan, peeled and crushed garlic, salt, and freshly ground pepper until creamy. Adjust the seasoning with salt and lemon, and, if needed, adjust the texture with a little extra milk.

    Pat the salmon dry with paper towels and season with salt and pepper. Spread half of the dressing over the salmon. Mix the breadcrumbs with freshly grated Parmesan and sprinkle over the top. Set the oven to fan + grill at 180°C. Cook the salmon in the middle of the oven for 7–8 minutes, until fully cooked and golden on top. To check if the salmon is done, insert a skewer or cake tester into the flesh—if it slides through easily, it’s ready; if there is resistance, cook it a little longer.

    Meanwhile, rinse the lettuce and cut it into bite-sized pieces. Peel the onion, slice it thinly, and place the slices in cold water to mellow the sharpness. Toss the lettuce, drained onion, and croutons with the remaining dressing.

    Arrange the salad on a serving platter, sprinkle with freshly grated Parmesan, and place the warm salmon on top.
