- 400 g minced beef
- ½ bunch parsley, finely chopped
- 1 clove garlic
- 1 lemon
- 1½ tsp ground cumin
- 1 whole romaine lettuce
- 100 g cherry tomatoes
- 1 cucumber
- 250 ml sour cream (9%)
- 8 pita breads
- Salt and pepper
- 1 tbsp oil

Method

1Mix the minced beef with cumin, finely chopped parsley, finely grated lemon zest, salt, and pepper.

2Shape into small golf-ball–sized balls and flatten them slightly with a spoon.

3Rinse all vegetables. Finely shred the lettuce. Cut the tomatoes into quarters and slice the cucumber.

4Mix the sour cream with salt, pepper, and a little lemon juice. Adjust seasoning to taste.

5Cook the koftes in a little oil for about 10–12 minutes until cooked through.

6Warm the pita bread.

7Serve everything at the table and eat either as a salad or stuffed into pita.

8TIP: Add a little chili to the meat mixture and serve with raw onions if desired.
