Kofte in Pita
Juicy, Persian meatballs with lemon and parsley that are quick and easy to make. Perfect in pita bread or as part of a fresh salad – and a family favorite.

  • 400 g minced beef
  • ½ bunch parsley, finely chopped
  • 1 clove garlic
  • 1 lemon
  • 1½ tsp ground cumin
  • 1 whole romaine lettuce
  • 100 g cherry tomatoes
  • 1 cucumber
  • 250 ml sour cream (9%)
  • 8 pita breads
  • Salt and pepper
  • 1 tbsp oil

    Mix the minced beef with cumin, finely chopped parsley, finely grated lemon zest, salt, and pepper.

    Shape into small golf-ball–sized balls and flatten them slightly with a spoon.

    Rinse all vegetables. Finely shred the lettuce. Cut the tomatoes into quarters and slice the cucumber.

    Mix the sour cream with salt, pepper, and a little lemon juice. Adjust seasoning to taste.

    Cook the koftes in a little oil for about 10–12 minutes until cooked through.

    Warm the pita bread.

    Serve everything at the table and eat either as a salad or stuffed into pita.

    TIP: Add a little chili to the meat mixture and serve with raw onions if desired.
