The Best Cinnamon Rolls
These warm and fluffy cinnamon rolls are sure to impress whether it’s at the breakfast table or alongside your afternoon coffee.

Dough:
  • 180 ml warm milk
  • 20 g fresh yeast
  • 50 g sugar
  • 1 big egg + 1 egg yolk, room temperature
  • 60 g melted butter
  • 375 g flour
  • ¾ tsp salt
Filling:
  • 135 g brown sugar
  • 1½ tbsp cinnamon
  • 60 g softened butter
Cream cheese frosting:
  • 85 g cream cheese, room temperature
  • 3 tbsp softened butter
  • 65 g icing sugar
  • ½ tsp vanilla sugar

    Heat the milk until it reaches 43°C (lukewarm). Dissolve the yeast in the milk and add sugar, egg, egg yolk, and melted butter. Mix until well-combined.

    Add flour and salt and mic with a wooden spoon until the dough comes together. Use the dough hook on your stand mixer and knead the dough on the medium setting until its smooth and elastic. You can also knead the dough by hand on a flour covered surface for approx. 10 minutes.

    Brush a big bowl with oil and place the dough in it. Cover with plastic wrap or a moist dishtowel and let it rise in a warm environment for 1-1½ hours or until it has doubled in size.

    Combine brown sugar and cinnamon in a bowl. When the dough has risen turn it onto a flour covered surface and roll it into a rectangle approx. 35x22 cm.

    Spread the softened butter evenly across the dough. Sprinkle the sugar-cinnamon mixture on top and press it lightly into the butter.

    Starting from the long edge, roll the dough up tightly to form a log. Cut the log into 9 equal pieces (approx. 3.8 cm wide).

    Preheat the oven to 180°C. In a greased Le Creuset Cast Iron Shallow Casserole place the rolls with a little space between them. Cover the casserole and let the rolls rise for 35-40 minutes or until they have risen and touch one another.

    Bake the rolls for 25-28 minutes or until golden. Whilst the cinnamon rolls are in the oven, whisk cream cheese and butter together until creamy. Add icing sugar and vanilla sugar and whisk until smooth.

    When the cinnamon rolls are finished baking, let them cool for 5-10 minutes. Then spread the icing on top of the cinnamon rolls.

    Serve the cinnamon rolls warm and enjoy them as a delicious breakfast or dessert.
